i bet you that he pulls the strings through his pants in a pocket or something. cuz he obviously has to pull his pant leg up to see the knot, so while pulling the leg up, he pulls the strings out of sight inside the pant leg. easy to duplicate. remember, everyone is looking at his shoe, not at what else he is doing.
