smoking fish is a type of cooking wayyy to broad a word to use. Curing is more true, i guess you could say its raw since its not cooked in the way we would think, using some heat. There are a few different ways to smoke things though, mainly using either cool smoke, or hot smoke. In this case it would probably be cool smoked to keep from drying out the fish

Oh gosh! no all sushi are made with raw fish
smoked salmon ( cured like ceviche then smoked ), california roll ( imitation crab) for example they are americanized sushi roll
other examples of cooked fish used on sushi roll are:
Smoked Salmon roll
Tako(octopus)
Unagi ( smoked eel )
Shrimp Tempura roll
Spider roll ( soft shell crab )
Spicy shrimp
to name a few are cooked fish…ask the chef behind your favorite sushi bar or anyone trained to make sushi like myself

Ok, talked to my mom, my aunt (both chefs) and the SUSHI CHEF THAT WORKED at the place my parents used to own.
It is RAW.

It’s raw, by the way.
And no, smoking is not a form of cooking. It just adds flavor. If I take raw meat and throw seasoning on it, it isn’t cooked.
