This cover is awesome, David Sides is actually amazing at piano in general.
Also, anything by Boyce Avenue, these guys are absolutely awesome.
Other than the huge ones: Jimi Hendrix, All along in the watchtower (bob dylan) and RHCP, Higher ground (stevie wonder) I really like Bowies cover of the pixies “cactus” and Local H’s Cover of b. Spears’ “Toxic”

RATM’s Ghost of Tom Joad, and Tool’s No Quarter both took the original songs and added different elements to them - they pulled it off, too
