we dont do off-site storage but our files get backed-up everynight, week, and month and our lead IT guy takes them home everynight. that is our offsite storage
Thats pretty standard. We have do the same thing here and while if we ever lost all of our data in a fire we would be screwed but if someone ever decided to wipe our shit out we would be in ok shape.
