It isn’t much different than dropping it on the street or the track, he is just turning the roller rather than pushing the car.
you can do 1/4 mile simulations on newer dynos
Any dyno runs I’ve seen in person (not many, but a few) the dynos are much more resistive than the road… but i guess not all are like that

On new mustang dynos you can actually change the inertia to simulate real world characteristic.
However, if you listen to that dyno - he clearly spins all the way though fisrt - even though he is on the rollers.
