Looking for someplace to buy some racks of pork ribs besides Wegmans/Tops. I’d like to buy a case (6-12 racks) and fill the smoker up a few times. I’m not after meat graced by god, spoon fed only food blessed by a Rabbi for $10 a lb. If I can save a buck and get some decent stuff, that would be even better. Anyone shopped at Federal Meats? Looking to start buying some larger cuts such as pork shoulders eventually as well and smoking some stuff for special occasions.
sloan meat market in sloan.

Can’t remember the last time i bought meat at tops, I would hesitate buying their meats for my dogs, their quality/cuts are crap.
What smoker you got?
I went with a digital electric masterbuilt, have not looked back to the old school stuffs.
Built in meat probe is pretty accurate, can adjust temps and watch the meat temp from my LR.
That guy combined with this

is gold.
Alabama Meat Market in alabama is pretty damn famous around these parts. I guess people come out from Rochester for the meat here. It’s all local fresh meat. It’s on rt 77 IIRC, off the pembroke exit.
Sloan market is closer for ya though. Never been there, but heard good things.
If you’re in Niagara County, or don’t mind taking a ride…
I frequently stop there to get ribeyes, and they are by far the best Ive found locally
+1 for BJs, I was extremely skeptical of the quality by pleasantly surprised.
+1 on this they have wicked super awesome cheap deals!
I am running a drum smoker out of an unlined foodgrade 55gal drum. Been flawless for a dozen 13lb turkeys this holiday season. Takes 20minutes to fill w/Kingsford, soak some applewood, light w/torch and stabilizes in half an hour while I finish prepping the meat. Near zero work to keep at temp, just check every few hours til meat temp nears ready.
A few years ago, my dad got a rib recipe from some old black guy he works with or who used to work with him. It was amazing!!! I don’t know if the guy he got the recipe from didn’t have teeth or what, but the meat was SO tender you could basically just eat it without chewing if that makes any sense. He got the meat from BJ’s I THINK and it was good. You’re going to be lathering them in bbq sauce so any ribs will come out great unless you get possum ribs or some shit
Willowbrook at the Bailey & Clinton food terminal. The place rocks I buy bulk food from them all the time.

They also have a store on genesse near uhaul!
Is that a walk in store? I thought that was where they did the processing.
+one for butchers… i’m going to try out 2 local guys tomorrow just because of this thread
Federal isn’t bad, that where we usually order our turkeys from. We smoked a load of thighs this year for thanksgiving.
Bj’s is surprisingly good. They’ve have big cryopaks in the back: ribs, loins, etc.
Spars is awesome, but I’ve never bought large cuts there.
I’ve had really good luck with pork shoulders from Wegman’s.
I’ve been contemplating splitting a hog from T Meadow Farms with a friend, they also have smaller cuts available. That seems to be where most of the local restaurants that serve local meat get their pork from, but that’s going to be more pricey for sure.
