Few questions about my rebuild

I know this is a newb question but what warrents new pistons when doing a rebuild. Some of you may have seen my new GS1000 project bike. Im getting ready to put the motor together but im not sure if I need to get new pistons and rings or not. Motor was pulled apart because PO was going to replace the rings. He lost interest in the bike shortly after but insists that it was just “tired” and needed rings. I know Suzuki sell pistons that are .5 over and 1.0 over stock but I dont think I need them because Im not boring out the cylinders. I can still see the factory cross hatch in the walls and there isnt any scoring so I was just going to clean them up and assemble the motor with new rings and gaskets but use the stock pistions and rods. What say you?

Also, what should I replace while the head and jugs are off other than gaskets? Please list it.

Check the piston to cylinder wall clearances to start and if they’re over spec then get new pistons and go overbore.
