sidenote;
scallops don’t have to be cooked quickly. score each side(think fine brunoise, nothing larger) of the scallop. season gently, kiss both sides, poach in butter (not margarine) at super super low simmer until mostly done through. they don’t hold a lot of residual heat so don’t worry about that
