The '10 Maple Syrup season is over now, but I figured I’d post up a few pics of the operation. We’re a small scale producer, but made about 32 gallons of syrup this year. It was a horrible season for most producers, but we came out above average.

To answer the questions:
We’re just north of Springville, so no, we’re not in Zoar Valley. Know somebody down there?
I don’t eat a lot of pancakes…waffles instead!
I don’t have to do firewood for the evaporator. I buy hardwood slab cut to length from the Amish. I put the stakesides on my flatbed and can heap the truck for $20. It’s a no brainer… I hardly even have to split any of it.
And yes, syrup can go on just about anything…especially bacon.
