yeah, the lady that runs tahous operations was there. I had a lengthy conversation with her as we remembered each other from Rochester. She said that the truck was 1 month old, and while it had great success in the Rochester market at the lilac fest, they were struggling at the fair. She gave me a tour and showed me the major components they had invested in, and wow… nothing like you would expect nicks to have!
Oh, and if you tell them you are from Rochester and frequent the restaurant, they make your plate massive and put tons of hot sauce on it. Just a tip for anyone going!

are nothing special IMO. A friend of mine was talking about how good they were. So we went to Jimmy Z’s and got some. Huge let down.

University Hots actually makes a pretty good plate. You guys know you can get em by south campus and/or on Hertel right? A couple guys from Fairport started the places up out here. :tup:

ok, fuck I need to make some of my own, what’s a good recipe for meat sauce
i like university hots more than Tahou’s. since they always cook your food to order, even when they are busy.
Last time I was at Tahou’s, there was a mound of home fries on the grill that looked to be about 75 lbs worth. yuck
Hot Sauce
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon oil
1 lb triple- ground beef
1 cup water
12 ounces tomato paste
1/2 tablespoon brown sugar
1 teaspoon ground black pepper
3/4 teaspoon cayenne pepper
1 teaspoon chili powder
1 1/2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon allspice
1/4 teaspoon cinnamon
1/2 teaspoon powdered cloves
TO MAKE SAUCE:.
In large skillet fry chopped onion and garlic in oil until soft. Add meat, stirring constantly with fork to keep its texture fine.
Once meat is cooked add water and tomato paste, cook for 10 minutes.
Then add sugar and spices. Cook 30 minutes, adding water if needed.
I use a variation of this recipe for the hot sauce that i make and it is as close to nicks as i have ever had. I use only 1 6oz can of tomato sauce, less water, about 2 lbs of clarified butter, and i tweak the seasonings a little bit. If you want it to be exactly like nicks, leave out the cinnamon and the allspice. they make the sauce into what it used to be years ago before nick died.
Just came from the fair, Don’s bistro is right next door to the nick tahous stand. Don is by far the nicest dude on the planet.

It’s some place in Brockport that supposedly had the best garbage plates in that area. We went there and it sucked… I want a good/real garbage plate.

Never heard of it, so I doubt it’s the best plate. Tahous, Henrietta, Penfield, and Village hots are all pretty damn good, theres still a shitload of places I haven’t been, maybe some day lol…
The coolest thing I’ve noted about a hots place in Rochester is Village hots in Pittsford is right next to Thirsty’s (sports bar) so people walk in and order their plate, then the kid runs over when its done and delivers it too you in the bar :biglaugh:
Oh and I think one of my friends cousins is one of those guys that started University Hots in Buffalo, I remember hearing about it awhile back…

I think as long as I’m in town, I’ll be getting a plate while I watch the demo derby!! That and a cold beer! I can’t think of a better Sunday afternoon!!
