salmon is actually a western hemisphere thing. You won’t find very much salmon in japan or at real good sushi bars.
California rolls have so many varieties its not even funny. I have a cookbook at home which is very good for sushi and very imformative. Best thing to do if you do it yourself is to go to wholeys and find out what their freashest fish are and choose from them.
