I saved the carcass to boil into soup. So much easier than picking all the meat off, and frozen soup makes for a great way to make your lunch in 2 seconds in the morning all winter. My 12 quart stock pot is still on its way from amazon, so it’s in the fridge in a bag.
As for the stuffing? Well, I guess I need to watch my Mom make it once. I don’t exactly have Grandma’s technique mastered…

I have a 16 Quart that I am not using you can borrow. It is heavy gauge stainless with a 3 layer bottom.
lol It’s really hard to fuck up a Turkey. If nothing else rib the neck/giblets out, stick in a pan, cover with foil, leave in the oven at 325 for 6 hours. Pretty much the worst you can do is have it come out dry, just like every relative’s turkey I’ve ever had. I think I’m going to try tpgsr’s techniques over the next 12 months and then insist that I make the turkey next year.
Thanks dude. I’ll let you know, but the wife found a 12qt anodized Calphalon stock pot on Amazon on black Friday. It should be here tomorrow. I wanted 16qt, but for $37 shipped I can cram the bird in.
If you do what I do and break the bird down to individual bones, It will fit nicely. I have two 24 Lb turkeys and a 6 LB chicken in my larger (20qt.) pot right now.
