From what I’m told edelbrock makes their carbs for more as cruiser carbs. The demon carbs are more race setup related carbs. I had an edelbrock on my mustang and it worked fine but the pickup and response on a demon is supposed to be better from what I was told. I don’t really know for sure this is just what I read up on the internet while looking for setups, and what people more carb informed told me also.
Buy the motor & tranny off ur Dad, 1 ton truck motors usually have forged internals & 4 bolt main blocks, & carbs r not hard to figure out, they’re simple mechanical device’s 
U can buy most of that top end stuff used from ppl steppin up to bigger stuff
