well, if it is a smoked salmon roll, it is cooked. If it is a salmon roll be it spicy or not, it is raw. Smoking doesn’t generally mean that you have to cook the food, it can be cold smoked, but cold smoking fish just doesn’t perform as well.

Edit: I read the title… That salmon isn’t smoked at all, it is cured. If it tastes smoked they probably used that shitty liquid smoke

I tried to break this down for matt but as usual he doesnt let anyone speak over him. But heres my explaination. Cooking doesnt always have to involve heat. Scandanavians “cook” by using different marinades and cures but use a refridgerator do to the “cooking”. Im gonna go back to my job now.

Smoked salmon comes in two distinct varieties: Hot smoked, or kippered, and cold smoked, or Nova lox. The main difference is the brining process and the temperature during the smoking process. Hot smoked salmon is fully cooked to 145 degrees where as cold smoked salmon is smoked at 80 degrees and is actually cured but still raw and so should be frozen for parasite control.

the cold smoked is still “cooked” like a ham there is a chemical reaction that takes place depeding on how its done.
