Unless you plan on keeping the truck forever, I’d keep the A/C.
My corvette still has A/C and I’m swapping in a >500hp 427.
The 75 lbs your saving on a 4800lbs truck is 1.5% weight savings. Even if the A/C is currently broken fix it and have a comfy ride you can sell when you want to.
EGR delete is nice, those do fail, so that is one less thing to worry about.
160 t-stat won’t help you at all, the truck will still reach the same running temp. I wouldn’t touch that unless your current t-stat fails.
The corvette servo with a good tune will make the truck feel much snappier. The truck comes with a 3.08 posi correct? Is that a 10 or 12 bolt? A set of 3.73’s would really wake her up, but expect the MPG to drop some.
If you want to go cheap cheap and see some gains. Just do a real intake, free up the exhaust, servo swap, 3.73s, egr delete and a tune. Do you have a huge clutch fan? If so chunk that and get an electric fan.

Back when these '99 Pursuit Tahoe’s were in service,i used to see many of them around.Mostly used by the NYSP,i have also seen a few Sheriff’s depertments using them as well.Another big buyer of these were the Michigan state police.
I think the main reason why these Tahoes started to be used was do to the 9C1 Caprice being discontinued by GM in 1996.The PPV Tahoe offered good power and torque,plenty of interior room,full frame,RWD,high speed pursuit rated,ect…
Im not trying to mad gas up my Tahoe as being the bomb,just saying i like it as many PD’s did and it meets my needs.

I agree on the 160* T-stat,stock is a 195* and this motor has a monster clutch fan on it.I may atleast drop it to a 180*,reason is for the timing bump.More timing = more heat,correct me if i am wrong.Normally the guy i go through for tuning recommends that the t-stat temp be dropped some.
This Tahoe had GU4 3.08 gears stock in a G80 posi rear.However i had the rear swapped out for GU6 3.42 geard rear end.
