if your gonna cut that much rear fender out you have got to go ahead an dovetail it. It would look a ton better. As for the front fenders, learn to weld make some flatties out of tube and sheet. Super easy to do.

Thats what i am planning for the rear. And for the front i was going to do tubed but might as well add some sheet metal.
