Tuna is one of the best fishes for sushi, IMO. It has a more meaty flavor. Salmon is kinda slimy, but still OK.

i dont like salmon in sushi or smoked, always smells like bad pussy. now tuna, swordfish, and blue marlin is my favorite when prepared like steak. seared on the outside but raw in the inside.

  • sushi means “with rice”
  • Sashimi means “with out rice” or “Raw fish with out rice” (depending on where it is in the sentance)
  • sushi-meshi means “sushi rice”
  • sushi-zu - “spiced, sweetened vinegar” (sushi vinegar)

I have a cook book here at home along with all the tools because as jenn stated we make it here at home all the time. I have been making this stuff my self for years. I guy that was at my fire station (also works for my company in a different departnment) showed me how to do it.

Types of sushi

Finger sushi = nigiri-zushi
Box sushi = hako-zushi
rolled sushi = maki-zushi
“battleship” sushi = gunkan-maki
Hand-rolled sushi = temaki
scattered sushi = chirashi -zushi
Sashimi = thin slices of raw fish nomally server with a side bowl of rice and miso soup.

samlon is a western form of sushi. It is not a widly used fish in japan.

Also mike you sure it was RAW eel? Conger Eel usually is boiled then cooled or seasoned when cooked in a brown sauce but still cooled. That is not typically served raw. Shrimp, octapus, surf clams, and squid are other fish that are usually cooked (boiling then cooled) prior to serving.

The most common problem is people think sushi = raw which is incorrect and why most people don’t try it.

no actually its all about the freshness and how fast they froze the fish after catch. When you go into a fish market you usually want to ask them what their freshest types of fish are (which ones just came in) and select out of those types.

right but you have seen raw clams and oysters, they will not present in a liquid or gell from very well on rice so they are cooked for presentation.

The way they do shrimp is pretty cool. You clean and peel them raw except the tail, then you skewer them on bamboo skewers so they are strait. Then you boil them for 3 min. when you take them off the skewers they will ramain strait and come out orange (which is how you tell they are cooked and done). you then cool them off and butterfly cut them down the center so you can lay them on the top of the rice.

i had a raw shrimp salad back home in the islands. basically its a bowl full of tiny ass like 1/4inch and skinny live shromps with salt and lemon juice. yes they are still alive moving and everything. normally eat them by the ocean just go out there with a fine mesh net and catch a bowl full then enjoy.

I love sushi…haven’t found a place here that can compete w/ the Sansei’s in Kapalua Maui http://www.sanseihawaii.com , or the Canal Club in Venice beach CA tho…man I miss fresh just caught that day pacific rim tuna…Ahi Tuna is my absolute favorite. I prepare it at home “blue rare” sear it like 30 seconds on each side and you are good to go. I actually get the salt and pepper tuna at Mitchell’s down at waterfront as my meal when we go there…mmmmmmmmmmmmm sushi…

that place right on rodi, we decided to try it one day and it kicks ass. They get it at her work from time to time also. Last time they ordered they called ahead and went and picked it up. Jenn called me and I gave her what I wanted and she brought it home at lunch.
