Computerizing this type of thing is EXACTLY what I do for a living. I’m not spending the money on it but I’ve already thought about having a couple of thermocouples and hydrocarbon analyzers feeding back into a PLC to control rotisserie drive speed and damper positions, light off an alarm when the meat reaches a preset temperature or the fire temp gets too low…

Just make sure that tank is nice and empty, also careful or any fumes. That oil is fucking potent. Sparks + Fumes/oil = no more Fry
