A nice eggplant parm? You could start with a very basic crushed tomato sauce from a jar or can and add fresh basil and seasonings. You could bread your own eggplant and oven cook it. Could grab a fresh pasta to cook up.
Couple +'s: Inexpensive, fresh ingredients are what will make or break this, everything can be made with the tools you have already.
