Cooking with Wine...

I’m in need of a dry white wine to cook shrimp scampi with linguini.

I’m going to use some chardonnay i have lying around. Any other suggestions? I have some blanc laying around, but I think the chardonnay will be a better fit.

I know with chicken, I use chardonnay all the time. However, with shrimp it may be a different story.

Suggestions?

I heard Red wine cleans out fuel injectors pretty well, but white just clogs them. You might need to run another inline fuel filter to run white wine.

Chardonay for sure. Also Lil Franks cut into pieces and boiled in Beer is AWESOME! Cook until almost all the beer boils off, let cool bout 10 minutes -YUM.

scampi cooked in chardonnay is great.

saute chicken with a spiced rum, I’m sure you’ll love it!

I use a chardonnay in my scampi recipe and I love it.

whatever kind of white wine is fine, but save that shit for fish. shrimp, scallops, clams, etc respond particularly well to butter so make a beurre blanc and shallow poach them. if you have to say you “cooked with wine” just emulsify a little of the chardonnay in before you put the shrimp in pan.

if you want to be cool and not look poor, grab some aged strip or whatev your preference. rub with salt pepper and oil. kiss both sides ~30 seconds per 1 1/2", poach in the shrimp beurre blanc until mid rare.

put shrimp on steak, shake some paprika/garlic/pepper/chilipowder and pour hot beurre blanc overtop.
